Another week of cold, another meal plan trying to hygge it up! If you are new to the meal plans here, please know that I try to shop for the meal plan I post here. But life happens and sometimes we settle for a frozen pizza instead of the meal that’s planned for, so please know that wiggle room is assumed in these posts. I am always looking for a doable weeknight dinner that is healthy, easy, and delicious (the trifecta!) so I try to provide lots of those options. (I also start with Monday because I get groceries delivered on Monday usually.)
MONDAY
Pork Souvlaki that gets turned into Greek Bowls or Greek Tacos is one of our favorite dinners. The blog post is one and needs new updated pictures for sure but it’s still such an easy dinner I had to share it. This time I am cooking the meat and then serving it on a bowl of couscous with feta, tomatoes, cucumbers, tzatziki sauce. Yum!
TUESDAY
Ok, it’s Taco Tuesday which my kids now beg me to honor. This Slow Cooker Beef Taco recipe looks even easier than browning ground beef! Can’t wait to try it – plus we have a lot of these cuts in our freezer from the half cow.
WEDNESDAY
I am working on a few sheet pan dinners that we might have but this Cuban Chicken Sheet Pan dinner from Half Baked Harvest looks amazing and now I’m craving it so we might have that instead.
THURSDAY
Pretty obsessed with this Skillet Cookbook I just got recently so this Skillet Chicken Enchilada Casserole is speaking to me.
FRIDAY
Pizza – have you seen this artichoke one? I die.
SATURDAY
Currently obsessed with Chicken Chili Verde – have a new Insta Pot version for you coming soon! But this one looks so good.
SUNDAY
We still love this Orecchiette with Sausage, Tomato and Broccoli dish, and it is so easy to make so we can have fun doing family stuff on Sunday.
