With spring quickly flying past us and Memorial Day weekend THIS week (can’t believe it!) there are so many things I want to cook and talk about and share, so I figured it was time for a quick links post. Plus we hosted an impromptu neighbor/sister bbq last weekend and it was everything I had dreamed of on those dark, dreary days of winter. So my wheels are turning on how to re-create that loveliness, and these recipes are going to be whipped up in the coming months by yours truly. Hope you find something to love…
Tomato Crostini with Whipped Feta – This dish by Ina Garten was the first thing that popped into my head when I thought ‘what should I bring to the Memorial Day party this weekend?’ A friend made it last summer, I followed suit and well, you should too. It’s so so good.
Creamy Cucumber Salad – My mom just gave me this exact recipe and said its addicting. So glad I found it online…
Can. Not. Wait. to try Samir Nosrat’s Persian Cucumber Tomato and Onion Salad which is just one of her 10 Best Persian Recipes in the New York Times.Her chicken stews look so good and I’m saving them for (literally) a rainy day when I want some comfort food. And this yogurt dip with herbs and cucumbers looks like it would be amazing with grilled chicken or fish or just hunks of bread.
I just checked out Whiskey in a Tea Cup by Reese Witherspoon from the library, and her first recipe were for these Pecan Crusted Chicken Skewers. She says that it is a rule in the south to always have something good to eat and drink for people who stop by, and these chicken skewers are a favorite, along with Sweet Tea of course. They look super easy, quick and delicious and I think my whole family would love them.
Someone brought something similar to Vietnamese Summer Spring Rolls with a spicy peanut dipping sauce to a party last year and I ate three of them immediately. They’re so light, healthy and flavorful. You can fill them with any veg (shredded carrots, lettuce and cucumbers being tops) but this radish one is so pretty too. I could eat them for dinner every night in the summer…with a cheese board of course because #balance.
This Wilted Lettuce with Hot Bacon Dressing looks perfect for all the lettuce I’m growing in the back yard.
I am addicted to this tomato sauce recipe from Smitten Kitchen using canned San Marzano tomatoes, and here is almost the same recipe using fresh summer tomatoes.
This Marinated Chicken Thigh recipe from Marc Forgione looks like a great marinade for grilling any meat, and his chicken breast with marinated cherry tomato salad needs to be on our regular rotation too.
Also, a Grilled Greek Chicken salad recipe that I could eat every day.
Corn, Tomato, Avocado and Basil Salad – I think I link to this David Lebovitz salad every time I do a summer links post, but it’s so good and just makes me think of summer. It would go great with this grilled deviled chicken he has on his blog too.
How good does this Shrimp Louis salad look?
I am dreaming of sipping Rose with these Cannellini Aglio E Olio for an appetizer. Want to come over?
