I don’t know about you but the long weekend + cold weather have me dreaming of staying in pjs + warm socks and drinking big mugs of tea and coffee. If only I could add ‘reading books by the fire’ but I’ll settle for listen to books on Audible while I cook these amazing dishes.
So Monday we were traveling and ate McDonald’s. BUT can I just share with you my laziest yummiest meal ever that I made for the football game on Sunday and we had for lunch on Monday? Throw 3 chicken breasts into a crockpot with a bottle of Frank’s Red Hot, a little butter, and packet of ranch dressing mix. Shred chicken in 2-3 hours. Serve on rolls with crispy iceberg lettuce and blue cheese dressing. Not a new idea, but still one of my favorites, and my favorite people’s favorites too.
MONDAY
Leftover Buffalo Chicken for lunch, ate out for dinner.
TUESDAY
Can’t wait to make this super simple soup for the cold weather…looks amazing.
WEDNESDAY
Cheeseburger Soup – equally excited to try this one. My daughter looked at me like her mind was blown when I said I was making this for dinner.
THURSDAY
Giada’s House Soup is a January favorite. Love how you can throw together what you have in the fridge.
FRIDAY
Have you seen Dad’s Friday Night Pasta from Half Baked Harvest? Looks so good…
I’ve been dreaming about an Artichoke Lasagna…this one looks so yummy. I can’t wait to make it, along with and a second meat lover’s one for my boys on Friday before we head up north.
SUNDAY
We will probably eat the leftover lasagna since we are coming back from skiing. But if we weren’t traveling my favorite home cooked Sunday dinner is roast chicken. And have you ever had the Lemon Spatchcock Chicken from Trader Joe’s? I love it but don’t always have a chance to run over there. This one by Dorie Greenspan via Alexandra Cooks looks so good…
