Meal Plan 1/14

This week it is so cold here in New Hampshire! Needing all the comfort food this week.

Monday

This Portuguese Chorizo, Kale and Potato soup looks amazing…I keep extra chorizo in my freezer because its not always easy to find when I am shopping for a recipe like this.

Tuesday

Tuesday: Paleo Slow Cooker Balsamic Chicken and Sausage

This was a big hit with everyone! And I loved that it came together really easily in the crock pot. I think next time I will double up on the balsamic vinegar and add a bit more garlic, but otherwise it was really flavorful and had that comfort food factor. Also, cheese on top doesn’t hurt but if you’re aiming for health it’s a winner as is.

Wednesday 

Sliced Chicken Sausages Sautéed with Apples and Onions – this dinner doesn’t have its own post because, um, there’s only 3 ingredients (not counting the butter). Which makes it super simple and fun. I usually serve this with egg noodles.

Thursday 

Root Vegetable Shephard’s Pie

This is such a delicious take on one of my kids favorite meals. I love the taste of rutabaga – if you don’t you can just use regular mashed potatoes.

Friday

Pizza – we are headed north to ski

Saturday

I just learned about this Buffalo Chicken Chili from a holiday party. I love it so much, and if you like Buffalo sauce you will love this too! Can’t wait to throw these ingredients in the crock pot while we ski.

Sunday

We are up skiing until Monday so of course I need to make my Slow Cooker Bolognese, its so good and we can throw the leftovers in the freezer for the next time we come up.
