Buffalo Chicken Dip

January 7, 2012

How can you make eating Buffalo Chicken more efficient for Football watchers? Make it into a dip of course!  This Buffalo Chicken dip might just be my most asked for recipe.  I actually can’t remember the real recipe, this is how I make it now and it is so good and easy.  I first got it from my best friend Megan (she’s from Buffalo and they take their Football watching seriously.) Here’s to making all your tailgaters happy….

Buffalo Chicken Dip:

2 8 oz. packages of Cream Cheese (Philly’s 1/3 less fat)

1 c. sour cream

1/4 c. Frank’s Red Hot (this will result in a mild dip, if you like it hot, add a few more dashes to taste).

2 chicken breasts (cooked at 350 for 30 min. a little s&p&evoo sprinkled on top), shredded

2 c. shredded cheddar cheese, reserving 1 c. for topping

2 celery stalks, finely chopped

In a medium sauce pan, melt the cream cheese, sour cream, 1 c. of chedder cheese and hot sauce together.  Stir in the shredded chicken and celery till well mixed.  Pour into a baking dish and sprinkle with cheddar cheese.  Cook for 20 min or until bubbling. Serve with celery, carrots, sliced bread or crackers.  Yummm…..
