I could say this one is dedicated to Paula Deen. She just announced she has diabetes. But really, I just love vegetables and flavor, and the way your body feels when you eat healthy. I really can’t get excited about healthy food if it lacks flavor. But healthy food that has flavor and makes you feel amazing, …mmm yes please.
So when my friend Silvia introduced this idea at our recipe share last month as a way to fit in more veggies in your diet, I tried it at home and loved it. You basically just put your vegetables in the food processor with an acid and oil and make your own salad dressing with the flavors of the veggies in it. The one she made, and I did as well, had avocadoes, tomatoes, onions, lemon juice, garlic, feta, and kalamata olives. Basically, I pureed a greek salad and put it on greens. This was perfect for me, since I could eat a greek salad every day!
There is something really satisfying from this dressing. It probably has a lot to do with the avocadoes. Who doesn’t love guacamole? This has that I-can’t-get-enough-quality (a hallmark of yummy food in my book). And it kept me full and buzzing all afternoon. This idea is part of the raw food diet concept, and she learned of this at a food class her yoga teacher offered in Portsmouth, NH.
The other great part of this idea is that you can use whatever flavors you want – you can puree carrots, ginger, rice wine vinegar, onions, soy sauce and sesame oil for an Asian flavor profile, or basil, tomatoes, parmesean, garlic, olive oil and other herbs for an Italian one. The possibilities are endless. I would love to hear from anyone who makes up their own delicious mix!
