Asian Pork Lettuce Wraps

We have been combining healthy food with pregnancy cravings around here, and these fit the bill perfectly:

But no matter what is going on – health kick or not, baby or not – they tend to fit our cravings because they are so good. We have pulled together some variety of Asian lettuce wraps since we were first married and used to live near a PF Changs in Rochester, NY.  This is on their menu, and my husband loves them….when he goes on a health kick, it tends to be of the low carb variety, so this has been a low carb meal staple.

The other bonus is that they are SO fast.  Think fast like tacos.  They are on the table in 10-15 min.  Most of the ingredients are pantry staples, just be sure to pick up the ground pork and Boston lettuce and you have an easy dinner any night. We actually had these for Saturday night, and we were starving so this served 2 people.  These would be great for entertaining too, just plan to buy enough.

First you saute up some ginger and garlic, which will guarentee what ever you are making will be yummy with these aromatics:

 

Then you brown a pound of pork on top of it, no need for salt & pepper since you will be adding soy sauce, then put some green onions in there:

After that, you can add the veggies you like, carrots, red pepper, etc. I added red pepper but didn’t sautee shredded carrots in the meat because I wanted them for crunch (by the way, can I tell you how much I love pre-shredded carrots in the produce section? I use them for everything!):

Peanuts and hot sauce are completely necessary for maximum deliciousness too.

I also used a very yummy Teriaki sauce that was infused with garlic and green onion, but regular Teriaki will do.  This is a great dish to experiment with all the delicious flavors you can find in the Asian aisle at the grocery store.  Have fun with it!

 

Asian Pork Lettuce Wraps (for a printer version click here)

1 t. vegetable oil
2 garlic cloves, minced
1 inch of ginger, minced
1 lb. ground pork
½ c. red pepper, chopped
6-8 green onions, chopped
2-3 T. soy sauce
3-4 T. teriyaki sauce (or hoisin sauce)
1 t. sesame oil

For Serving:
Boston Lettuce
shredded carrots
red pepper, thinly sliced
chopped peanuts
peanut satay sauce
sriracha or hot sauce

Directions:

Heat vegetable oil in pan on medium heat. Sautee garlic and ginger for 2 minutes until fragrent. Add pork and brown, 5-7 min. Add green onions and red peppers, cooking until soft, about 5 min. Add remaining sauces, adding more to taste.

Serve in lettuce cups and top with favorite toppings.
